Mild Tteokbokki With Vegetables
Our Mild Tteokbokki with Vegetables is a colorful, comforting dish that’s both wholesome and satisfying. Tender rice cakes meet fresh, vibrant veggies in a gently spiced sauce — simple, cozy, and full of flavor in every bite.
Ingredients

- 200 g tteok (rice cakes), soaked
- 250 ml water
- 3 tbsp Bibap Manufacture Mild Tteokbokki Sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup sliced carrots (thin matchsticks or diagonal slices)
- 1/4 cup chopped bell peppers (any color)
- 1/4 cup sliced zucchini or baby spinach
- Optional: 2 tbsp corn kernels or chopped onion for extra texture

Preparation
- We begin by preheating the oven to 200°C. While it heats, we lightly sauté the carrots, bell peppers, and zucchini, or spinach if we prefer, in a small pan with a little oil. After a couple of minutes, they become slightly tender while still keeping their bright colour.
- In another pan, we simmer the soaked rice cakes in about 250 ml of water together with the Bibap Manufacture Mild Tteokbokki Sauce. Over the next ten minutes, the sauce thickens and begins to cling to the rice cakes, turning them glossy and soft.
- When the sauce is ready, we add the sautéed vegetables, along with corn or onion if we are using them. We stir everything together so the flavours blend evenly.
- Next, we transfer the mixture to a small baking dish and top it with a generous layer of shredded mozzarella. It bakes for just a few minutes until the cheese melts, bubbles, and turns lightly golden.
- We serve the dish hot, enjoying the gooey cheese, the tender rice cakes, and the warmth of the vegetables .
