Our Spicy Cheese Tteokbokki Bake is pure comfort food with a Korean twist. Soft, chewy rice cakes are coated in a rich, spicy gochujang sauce that’s warming and deeply flavorful without being overpowering.Baked in the oven and finished with a generous layer of melted cheese, everything comes together into a creamy, satisfying dish with a lightly golden top and a soft, indulgent center. It’s the perfect balance of heat, umami, and comforting richness. This is the kind of recipe you make for cozy evenings, to share with friends, or whenever you’re craving something bold, cheesy, and deeply comforting.
Ingredientes
600 g Korean rice cakes (tteok), preferably fresh or soaked if dried
2 cucharadas de Bibap Manufacture Gochujang
1 tbsp gochugaru (Korean chili flakes, adjust to taste)
2 tbsp soy sauce
1 tbsp sugar or honey
2 cloves garlic, finely minced
1 tsp sesame oil
300 ml water or light vegetable stock
150 ml cooking cream or heavy cream
200 g mozzarella cheese, grated
50 g cheddar (or another flavorful cheese), grated
2 spring onions, finely sliced
Optional: sesame seeds for garnish

Preparación
- We begin by preparing the rice cakes. If we’re using dried tteok, we soak them in warm water for about ten minutes until they soften slightly, then drain them well. Fresh rice cakes can be used straight away.
- Next, we make the sauce. In a saucepan, we gently combine Bibap Manufacture Gochujang, gochugaru, soy sauce, sugar, garlic, sesame oil, and water or stock. We let everything simmer briefly until the sauce is smooth, fragrant, and well balanced. Once it comes together, we stir in the cream, which softens the heat and gives the sauce its rich, comforting texture.
- We add the rice cakes to the sauce and let them cook gently for a few minutes, just until they start to become tender and are fully coated. Then we transfer everything into an ovenproof baking dish, spreading it out evenly.
- Now comes the best part: we generously sprinkle the grated cheeses over the top. In a preheated oven at 200°C, we bake the tteokbokki for about fifteen to twenty minutes, until the cheese is fully melted, lightly golden, and bubbling at the edges.
- To finish, we scatter sliced spring onions and, if we like, a few sesame seeds over the top. We serve the Spicy Cheese Tteokbokki Bake straight from the oven while it’s hot, creamy, and irresistible. It’s perfect on its own or shared at the table, especially on cozy evenings when comfort food is exactly what we’re craving.
