Ingredients

- 4 slices of soft white bread or brioche
- 2–4 slices of good-quality ham (e.g., jamón cocido or deli ham)
- 4 slices of melty cheese (e.g., mozzarella, Emmental, or Swiss)
- 4 tbsp Bibap Manufacture Kimchi Original, chopped and squeezed of excess liquid
(Available at bibap-manufacture.com) - 1–2 tsp unsalted butter (for grilling)

Preparation
- We begin by laying out the four slices of bread so everything is ready to assemble. On two of them, we layer a slice of cheese, followed by one or two slices of ham. Then we add a couple of spoonfuls of chopped Bibap Manufacture Kimchi Original, letting it spread naturally across the bread. We finish the stack with another slice of cheese before placing the remaining bread on top to close the sandwiches.
- Next, we lightly butter the outside of each sandwich. This helps them turn beautifully golden and crisp in the pan.
- We heat a nonstick pan over medium heat and place the sandwiches inside. They cook for three to four minutes per side, and we press them gently with a spatula so the cheese melts evenly and the edges toast nicely. When they are golden brown and the cheese is soft and warm, we lift them from the pan and cut them diagonally into triangles, the classic bikini style.
- We like serving them straight away, with a little extra kimchi on the side or a simple, fresh salad.
- For even more crispiness, a sandwich press or panini maker works wonderfully. And if we want a touch more heat, we add a bit of gochujang or a pinch of chili flakes inside before grilling.
